Mix Vegetable Salad(Indonesian: Urap)

This recipe was came from Betawinese, ethnic group indigenous to Jakarta, Indonesia.

Ingredients
  • 3 bunches spinach, remove the stems
  • 1/4 head cabbage, coarsely shredded
  • 5-6 cup bean sprouts
  • 20 yard-long beans, cut into 1-inch pieces (about 21/2 cups)
  • 5 shallots
  • 4 fresh red chili pepper, 4 inches long
  • 11/2 inch piece ginger(lesser galangal), fresh aromatic one
  • 1-2 teaspoonfuls sugar, to taste
  • 1-2 teaspoonfuls salt, to taste

    Boil spinach leaves, bean sprouts, and beans separately. Not throughly boiled. Cool them into room temperature and then mix together.
    Shred the coconut meat, food processor use is applicable. Set aside about 11/2 cups, keep the remainder for future use in a freezer.
    Steam coconut and place the other ingredients next to it; shallots, chili peppers and ginger. Steam until softened.
    Remove shallots, chili peppers and ginger. Grind with a blender until well smashed. Add coconut to mixture and stir until well mixed.
    Finally, mix previous boiled vegetable with spice mixture. Add sugar and salt to taste.

    Serving Suggestion

    Serve at room temperature
