(Indonesian: Sop Buntut)

This exotic recipe was found in almost every part of the archipelago.

Serves: 4 person

Ingredients
  • 2 pounds oxtail, cut into 1-inch pieces
  • 4 potatoes, medium, cubes
  • 4-5 carrots, medium, sliced
  • 1 tomato, sliced
  • 1 teaspoon nutmeg
  • 5 cloves
  • 1 teaspoon pepper
  • 5 cloves garlic, chopped
  • 1 onion, medium, chopped
  • 2/3 teaspoons butter
  • 1/4 cup leek (white part only), finely chopped
  • 1/8 cup celery, finely chopped
  • 61/2 cups water
  • salt to taste
  • Direction

    Boil some water. Reduce the heat to medium, put oxtai in. Continue to cook until meat is tender, about 3 hours. Skim off fat.
    Saute’ garlic and onion until golden, separate.
    Add potatoes and carrots into boiling oxtail.
    Add nutmeg, cloves, pepper, and salt.
    Add garlic and onion.
    Cook about 10 minutes more, or until carrots and potatoes are done.

    Serving Suggestion

    Serve garnished with celery and sliced tomato.
