Serves: 4-5 person

Ingredients
  • 2-3 pound chicken, cut in half lenghtwise
  • 2 cups thick coconut milk (canned one is suggested)
  • 10 shallots
  • 5 cloves garlic
  • 6 red chili peppers
  • 10 candlenuts
  • 1 teaspoon shrimp paste (trasi)
  • 11/2 teaspoon salt
  • 2 thin slices fresh laos
  • 2 stalks lemon grass, bruised
  • 1 tablespoon tamarind concentrate
  • Direction

    First, prepare the spice mixture. Collect shallots, garlic, chili peppers, candlenuts, shrimp paste, salt and palm sugar. Grind to paste in a blender or food processor.

    Boil coconut milk. Add paste, laos and lemon grass into. Stir frequently, wait until mixture is almost dry. It takes about 30-45 minutes. Then, remove and discard lemon grass.

    Grill the chicken gently, skin side up under low heat until rather brownish. Rub the spice mixture on the chicken halves. Continue to grill, basting with remaining spice mixture. The chicken is done when its colour turned into golden.
